Pasture Grazed Beef Roast – Instant Pot

For a consistently juicy tender roast, the Instant Pot is a great kitchen gadget.

Chef tip:

  • Salt two days ahead.  Shake salt over entire roast, rub or brush in.  Cover and place roast in refrigerator for two days.

Ingredients

  • 3 pounds Pasture Grazed Beef Roast
  • 1 medium onion, sliced
  • 3 garlic cloves, peeled and smashed
  • 2 tablespoons coconut oil
  • 2 cups beef bone broth or water
  • salt and pepper to taste
  • Optional - add your favorite veggies such as carrots and potato.

Instructions

  1. Tip: Plan for natural release time for retaining more juice.
  2. Turn Instant Pot to sauté.
  3. Add coconut oil.
  4. When simmering, add the roast.
  5. Cook 2-3 minutes until browned then flip roast to brown the other side.
  6. Sprinkle on salt and pepper. Top with onion and garlic. Pour in broth or water.
  7. Close and lock Instant Pot lid.
  8. Set Instant Pot to “Manual” and program for 70 minutes.
